Emergency Handbook for Food Managers

Developed as a quick reference guide to provide step-by-step emergency information to food managers and other supervisory personnel at food service establishments, the handbook also includes training materials for food workers.

The handbook:

  • Addresses both naturally occurring and man-made emergencies;
  • Provides prompts for whom to call, first steps to take and subsequent recovery actions to follow after an emergency happens;
  • Contains tips on managing longer-term emergencies caused by disruptions of utilities and municipal services;
  • Offers ongoing food security and emergency preparedness advice.

Photo Lessons and a companion Discussion Guide for Food Managers are included and mirror the topics in the handbook, but are geared for staff training. The photo lessons also can be used as a guide for response during an actual emergency.

Emergency Readiness for Food Workers Training Guide

This guide offers food trainers a two-hour training course based on the Emergency Handbook for Food Managers above. The guide will help food workers prevent or reduce threats to food safety and people's health during an emergency. The guide is recommended for food manager certification renewal training. It addresses:

  • how to stop the spread of food contamination during a range of emergency scenarios;
  • managing food in the Temperature Danger Zone when the power is out;
  • keeping food secure from tampering and terrorism;
  • personal safety and having an exit strategy in the event of an emergency; and
